Tal Pelter, 37, winemaker and proprietor of the winery, the second son of farmers.
The Pelter family has a farm in Moshav Zofit and is engaged in the growth of a variety of foliage and cut flowers as additives to flower arrangements – primarily eucalyptus and grevilleas.
Tal continued the farming tradition of the family, and studied agriculture at the Agricultural Faculty of the Weitzman Institute in Rehovot, Israel, majoring in land and water use. In 1998 he traveled to Perth, Australia and studied viticulture for two years at Curtin University, earning a bachelor degree, with honors, in wine science.
In parallel, Tal worked in a small boutique winery – Darlington Estate – located in the hills adjacent to Perth. This winery was established and operated (together with a gourmet restaurant) by a family of Italian origin. All of the wines produced by the winery are sold exclusively through the restaurant. In this winery Tal experienced working with premium wines, including blends, sparkling wines, Semillon, Sauvignon Blanc, Shiraz and others.
Upon completion of his studies, Tal worked an additional year at Evans & Tate - the largest winery in Western Australia, processing approximately 10,000 tons of grapes per year.
Returning to Israel in 2001, Tal was determined to put into practice the art he studied and his beliefs by establishing a winery of his own. In 2002 Tal experienced the sudden and unexpected death of his mother, Tiva, At the end of the period of mourning, the family, as a tribute to Tiva, immediately began the establishment of the winery. The first winery was built, by family and friends, on the grounds of the family farm in Moshav Zofit, and was the source of four vintages.
During the course of 2005 Tal, together with Einbar and their two young daughters, Shacham and Aya, moved to a "young couples" neighborhood in Kibbutz Merom Golan where they have built their home.
In conjunction with the move, Tal transfered the winery to its present location in Kibbutz Ein Zivan.

Nir Pelter, 27, the youngest of the four Pelter children, whose path, upon completion of a lengthy military service, led to the winery, where he is now responsible for promotion and marketing.

Sam Pelter, 65, attorney and farmer, father of Tal, Nir and their siblings Adar and Orly, worked for twenty-five years as Assistant and Deputy General Counsel of Israel Aircraft Industries. Together with his wife Tiva established a thriving flower and greens business on Moshav Zofit. Following his retirement from IAI , Sam joined the winery and deals with foreign marketing.
